Villa Mako offers guests the choice of ordering meals from an extensive and varied suggestion menu of Balinese and international dishes or working with the chef to design meals according to individual tastes. The chef is more than willing to experiment with new recipes and ingredients and has both English and Indonesian versions of several cookbooks to ease translation.
Balinese cuisine is rich and well seasoned, but not overly spicy. The chef can accommodate the seasoning of Indonesian dishes to suit different palates. The villa is close to the coast so fresh seafood is usually easy to source (good squid and prawns as well as fish and small lobsters). The chef’s specialties include a Balinese banquet and a seafood barbecue feast.
To get the most out of the kitchen, it is useful to plan meals with the cook the evening before, or over breakfast, allowing plenty of time for deliveries and shopping to be done. Meat is sourced from quality suppliers and the chef will buy other ingredients from the market daily. Guests will be requested to provide grocery money in advance, and the staff will present receipts for reference. Groceries and beverages are charged at cost price.
